Trinity Staff Goes Mexican at BOL!

This past Saturday the staff at Trinity Reservations decided to go Mexican for lunch. We made for the first time chicken and eggplant enchiladas! Our guest were a little apprehensive as many had never had enchiladas before. Well everyone loved them!!! We had requests for seconds and thirds. What a blessing that we made too many and still had enough to send some home with those who asked. On a more serious note, we had 6 children attend our meal. 3 were teenagers and 3 were between the ages of 4 and 7 years old. They were all very hungry and asked for extra to take home. Nothing moves me quite like the site of kids who do not know where their next meals is coming from! A local bakery once again blessed us with several loaves of bread to give away and the weather was sunny with temps in the 40's. There are so many ways to help others in your community. We encourage you to reach out to your local community service organizations to find out how you might share some of your time and gifts with those in need in your community. You will be a blessing and be blessed in the process!
